“Mix In The Pan” Chocolate Cake

Remember what I posted about not making something with any chocolate in it anytime soon after making brownies? Well yeah, I did not followed my own advice coz I did made crinkles again last Thursday and I just made a chocolate cake earlier this afternoon! I just couldn't resist this very simple recipe that I couldn't take it off my mind that I said I just have to do it!

 So I am very pleased to tell you that the chocolate cake I just did was a success! Take note that this is the first time I made chocolate cake from scratch coz what I did before was a ready mix from Betty Crocker. I am very pleased with the outcome that I would be doing this again and I am also very grateful to find the site for this wonderful chocolate cake recipe!  What I did was not exactly as the title because I did mixed the ingredients on a mixing bowl then transferred it on my 8x8 non-stick baking pan. I just got worried that I wouldn't be able to mix it thoroughly with just a little space but if you want to do it straight to the baking pan, it's really ok because that's what the instruction says and the title too..duh :)I used the left over frosting that I had from Betty Crocker, and it tasted so good!

Baking Items from the US

I got a text message from my aunt yesterday that she already got the items which I bought from Amazon and had them delivered to her home in the US. You see, my aunt will send a balikbayan box this April and I asked her if it would be alright if I could squeeze in some baking items for myself because this items are not that easy to find here in the Philippines. So imagine my excitement when she told me that it’s no problem and it’s really ok! So, I immediately logged on to my Amazon account last March 19th, chose Amazon Prime for a free 2-day shipping, ordered and voila… after 2 days my baking items arrived! Amazon still hasn’t disappointed me after all these years of ordering from them! They always arrived on time and didn’t encountered any problems, ever!

I am now very excited for my items which my aunt told me that would probably arrive around 2nd or 3rd week of May. It's ok, I know for sure that it would be worth the wait…

Hope you all have a great weekend ahead of you! I am still thinking what to bake this weekend but I already did last night. I just made a quick and easy recipe which are Crinkles because my sister requested it from me since last week. I just did it coz it doesn’t need too much ingredients and like I’ve said so easy and no sweat! For the recipe you can get it here Chocolate Crinkles. I got this recipe from the baking school I’ve enrolled last year which was Standard Culinary School in Dasmarinas Cavite.

Banana Muffins

I was torn between making banana loaf or banana muffins and until yesterday I really can’t decide what to bake between the two. Finally out of the blue, I decided to go for banana muffins because I want to try the muffin pan that I bought and I also found out that I was lacking in mayonnaise that I would need for the banana loaf recipe that I have. So ok, I prepared all my ingredients and pray that it would taste good.

I got the recipe again from allrecipe.com. The recipe has so many good feedbacks from very easy to make to very moist and delicious. It was indeed very easy, delicious and moist! But I admit that maybe I could’ve made it a lot better if I tried a different suggestion from those who gave feedback from the site, coz there are really plenty of suggestions! A couple of the suggestions I added to the recipe was adding a teaspoon of vanilla and 1/4 tsp of ground cinnamon. I also reduced the amount of sugar from 3/4 cup to 1/2 cup. I also mashed 6 small sized over riped bananas instead of 3 large bananas because that’s all we have in the house. I also added cashew nuts for the toppings to give the muffins a crunch when biting. Next time I’m gonna add a little bit more of cinnamon and a different kind of banana.


Brownies Part II

Yesterday, I did my very first brownies. I said first eventhough I did brownies before(you can refer to my very first post “Cookies and Cream Brownies) because I did not used ready mixed this time. I got the recipe from Laura In the Kitchen site for Fudge Brownies. I copied everything in the recipe but I don’t know want went wrong coz my brownies ended up to be not fudgy at all!



Maybe because I overmixed(as always!) the batter or that I underbaked it, I don’t know. But it ended up too sticky on the inside. The outside part was perfect but the inside was not. Hay… I am so disappointed. But the good news is, eventhough I am not completely happy with the result, my family(my tasters as I call them) still ate it and said that it was good. Maybe they’re just hungry or did not want to hurt my feelings… haha!

I promised myself that the next time I do brownies, it would be really delicious and fudgy already! But I am not making brownies anytime soon. I think I’ll stay away with anything chocolate for the meantime and try other much easier recipes.

Soft and Chewy Peanut Butter Cookies


I am in a baking mood last night so after I got home from work and had eaten my dinner, I prepared the ingredients for the peanut butter cookies that my cousin has been  begging me to make.

I planned on making half of the recipe that I got from allrecipes.com, when I realized that I already ran out of flour! Yes, big mistake on my part coz I did not checked if I still have flour on my pantry. Good thing that the remaining flour that I had was still a ½ cup so I can still make a forth(1/4) of the recipe, since the original recipe calls for 2 cups. I just decided that I’ll just make smaller cookie doughs so that I can still have more cookies baked.

I used Skippy Extra Crunchy Peanut Butter that has been on our kitchen for awhile now(but still not expired) and that was a good thing since it already has peanuts on it that added more crunch on the cookies. I was very satisfied with the output, very soft indeed and chewable, although I could’ve made more if I was not lacking in flour.  The cookies were gone in an hour or so, but I was able to reserve some pieces for my friend that I’ll bringing at work. Byt the way, I was able to make 24 medium sized cookies for a forth of the original recipe.


Anyway, I tweaked the recipe a little, instead of margarine I used unsalted butter, I just added a pinch of salt. I chilled the cookie dough for about 20 minutes and I also added more peanut butter and some chocolate chips coz kids love it and I love it!

Chocolate Crinkles

We had a visitor this afternoon, a family friend and one of my mother's bestfriends Ninang Cora. I was thinking of what to bake so she could sample one of my baked goodies. Anyway, I always wanted to try chocolate crinkles or pixies so I thought it was the perfect timing to bake it. So I did and here is the result. Below is the recipe for it, it was so simple and easy that even a novice baker could do it. Try it, I'm sure your family and mostly your kids will love it!

CHOCOLATE CRINKLES

FLOUR MIXTURE
1 cup all-purpose flour
1/4 cup cocoa(dutch processed)
1 tsp. baking powder
150 grams white sugar

EGG MIXTURE
1 pc egg
1/4 cup cooking oil
1/4 tsp. salt
2 tsp. vanilla

FOR ROLLING
1 cup powdered sugar

Procedure:
1. In a mixing bowl, combine all ingredients of flour mixture, set aside.
2. In another mixing bowl, combine all ingredients of egg mixture, using wire whisk.
3. Mix flour mixture to egg mixture, blend well.
4. If the mixture is too soft, chill the dough until it is easy to handle. (I chilled it for about 20 minutes)
5. Grease cookie sheets and dust with flour. Form dough cookies into balls. Roll in powedered sugar.
6. Arrange the formed dough 2" apart for spreading.
7. Bake for 8-10 minutes. Wait until dough formed a crack.
8. Wait for about 10 minutes before transferring the cookies to cooling rack.


Chocolate Cupcakes & Cake

It was my niece's 3rd birthday celebration last March 6 and I promised to bake her a chocolate cake and cupcakes on her birthday so I actually did after I got home from work. I was so tired doing both the cake and the cupcakes but it was all worth it! The cupcakes were brought to her school in the morning when she celebrated her birthday with her classmates, while the cake was for our family only.

I got the cupcakes recipe from Joy of Baking site while the chocolate cake was a ready made mix from Betty Crocker, it was the Super Moist Chocolate Cake flavor and I also got the Rich and Creamy Chocolate Frosting also from Betty Crocker. Both are absolutely delicious! I think my choco cupcakes were more successful than the vanilla cupcakes I made two weeks ago. You should also try the Super Moist Chocolate Cake from Betty Crocker if you don't want to make a chocolate cake from scratch. I really loved it!

Chocolate Chip Cookies

Another first for me on baking chocolate chip cookies courtesy of my mini oven. I expected it to be crunchier and thick but it turned out to be chewy and thin. As always, too sweet for my taste but maybe because I used the regular choco chips instead of semi-sweet chocolates that I see more often on recipes for choco chip cookies. I still have yet to buy semi-sweet chocolates but for sure that would be one of the first things I will buy the next time I go to Divi.

I baked this cookies on a Saturday night and spent almost 3 hours finishing baking all the cookies! My daughter Hannah never left my side and one of the first ones who gets to sample the cookies besides my sister and my cousin. She just took a small bite and that was it! She loves chewing the chocolate chips more than the cookies itself :)

No Bake Cheesecake

I did my very first No Bake Cheesecake last Friday night and I used Magnolia cream cheese and Anchor whip cream as two of my ingredients. I copied the recipe from Joy of Baking site because it’s recipes are one of the easiest to follow. I just made a mistake of over-whipping the cream so instead of a soft peak I ended up with a stiff peak result! My cheesecake result was delicious except that it came out soft and my graham base also did not hold much, it just came crumbling when I took out the cheesecake from the pan. I also had a small pan, so the excess batter was put on a plastic container. By the way, my cheesecake was a hit to my family! They loved it… well when was the time they did not like what I did? :)

Divi Trip

I went to Divisoria yesterday, particularly at Sto. Cristo street, and went on to buy a couple of baking necessities I will use when I bake. First thing I bought on one store was 2 loaf pans, 8” 1 round pan, a couple of macaroon and egg tart tins and an ice cream scoop. Then after a few walks, I came across another baking supplies store and bought cocoa powder, 2 different kinds of sprinkles, chocolate chips(this is a wrong decision on my part since the chips melted on my way home due to the intense warm weather yesterday), oven thermometer and cupcake holders.

It was so hot yesterday that eventhough I still wanted to navigate Divi to look for the other things I need, I already gave up. For one, my chocolate chips had already started to melt and didn’t I told you that my daughter Hannah was with me? Yes she was with me at Divisoria and she was already tired of walking and wanted me to carry her which obviously was very hard for me since I am carrying two big plastic bags plus my bag and now, her. but it was ok because the baking supplies stores were just beside each other so I was not able to walk very far.

Anyway, the one thing that I really wanted to buy but was not able to do so because all of the stores I asked  don’t have one, was the unsweetened and semisweet chocolates or even bittersweet chocolates! Apparently,even one baking supplies store at Divi don’t sell baking chocolates! So I guess I really have to go to Chocolate Lovers next time eventhough it was very far from us. I have no choice I really needed those for my baking.

But except for the unsweetened chocolate(for the frosting), which I’ll make do with my melted choco chips, I am all set for the chocolate cupcakes I’m gonna bake for my niece’s birthday! So excited! Wish me luck on my choco cupcakes!
