Betty Crocker's Chocolate Chip Muffins

I just baked a ready made mix from Betty Crocker's Chocolate Chip Muffins which is one of the boxes my aunt sent from the US. It was so easy to make since it's already pre-mixed, I just added 3/4 cup water, 1/4 cup  vegetable oil and 2 eggs from the mix and scooped it on the paper cups and voila... a light, not too sweet choco chip muffins! I yielded 15 muffins and currently there were only 7 left as I type :)



Blondies Epic Fail

Honestly I don’t really know if I have to post this or not because I got so disappointed with the outcome that I am debating if it deserves a space on my blog. But since I promised that anything I baked successful or not will be shared here , so here it goes my blondies fail!

The picture just looks good on the outside but  completely different on the inside(sorry I don’t have the heart to take another picture of it). When I turned it upside down to transfer on the cooling rack the upper half fell on the cooling rack and the bottom half stuck on the bottom of the pan! I don’t understand what I did wrong, I buttered the bottom of my non-grease pan generously but didn’t put a parchment paper. Also as soon as I remove the pan from the oven the blondies shrunk and looked a little flat. Did I baked it a little sooner? The recipe said bake for 20-25 minutes so when I inserted a tooth pick after 20 minutes and it came out clean, I already removed it from the oven, and this is the outcome? Did my oven have something to do with it? or my pan or the batter? I don’t know, I’m just so disappointed…

But… eventhough the outcome was unsuccessful, still the blondies was gone in a matter of hours. I did not tasted it but my family said it still tasted good. Oh well, I just said to myself I have to redeem myself and bake another one. I would just try another recipe next time…

Steamed Puto with Cheese

I just made steamed puto with cheese for our merienda(my first time) and what can I say? It was so tedious to make! I had a total yield of 68 puto's all in all. I was so tired from doing it that I just want to sleep and retire on my bed after, that's how tired I was! But it all compensated from the positive reviews my family made coz they absolutely loved it! They even said "parang may handaan ha?"...haha!!!

I got the recipe from rlin0811, one of my GT sisters from Femalenetwork.com... thanks a lot sis! I had no idea that this recipe would amount to a plenty yield of steamed puto that's why I just bought 20 puto molders thinking I would just use all and also use my 12 cup muffin tray, I wished I bought another 20 molders but it's really ok, I guess I have to buy another one next time. Speaking of next time I will definitely add food coloring the next time I make this, you know ala-Goldilocks, coz I now want to add this for my daughter's birthday celebration this July. Anyway, did you notice how cute the molders are? I picked the colors myself..haha!

Here's the recipe(I copied it exactly):

Ingredients:
3 cups all purpose flour
1 1/2 cup white sugar
3 tbsp baking powder
3 eggs, beaten
1/2 cup melted butter
3 cups fresh milk (I used alaska fresh milk)
quickmelt cheese (for toppings)

Procedure:
1. Mix the dry ingredients (flour, baking powder, sugar).
2. Put eggs, milk and butter. Mix the batter well. (I used electric hand mixer)
3. Put the batter in small muffin pans and let it steam for 10 minutes or until inserted toothpick becomes clear.
4. Put cheese on top and let it steam again until the cheese melts.

I just noticed that after 8minutes it was already done that's why on the next batch I lessened the time and made it 8minutes sharp and put the cheese and cover again for another 2 minutes.

Lastly, before I forget, I did not used my oven for this. I guess I have to let my oven rest for awhile from baking...

Happy Mother's Day Vanilla Cupcakes!

I just baked something special for the mothers in our household today... Vanilla Cupcakes! I said before that I would make this cupcakes again and it would be better than what I did before and this is the perfect time to bake this because this day is special to me as well as all the mothers in the world!

I found this recipe at browneyedbaker.com. One of the ingredients here is sour cream, and since I do not have sour cream, I just substituted it with 1/2tbs vinegar plus 1/2 cup fresh milk. I really love the outcome of the cupcakes! It is so much better appearance and taste wise than the first time but the frosting is really too sweet! I have yet to find the perfect frosting for my vanilla cupcakes. I would definitely use this cupcake recipe for my daughter's 4th birthday this July!

Baked Potato Wedges

For a change, I decided to bake something that doesn't have flour or sugar in it so yesterday I went to the supermarket to buy some potatoes and olive oil because I will bake potato wedges!

I tried to find a good and easy recipe for this and I found a lot! But I want something that's not too complicated and just have a few ingredients and I stumbled upon Ina Garten's baked potato wedges. Of all the recipes I found this one's I think is the easiest. The first batch of my potatoes turned out to be too salty! So on the next batch, I lessen the salt and it turned out fine. I don't have fresh rosemary leaves so I just bought mckormick's from the supermarket. Before I made the baked potatoes I planned to make my own dip for this but the recipe that I found on the net included fresh chives on the ingredients and I couldn't find one on the supermarket so I just decided to buy a ready made dip.

So below is the result of my first baked potato wedges! Next time I'm gonna try parmesan cheese as one of the ingredients coz it absolutely looks yummy!

Oatmeal Chocolate Chip Cookies

For our merienda for today, I baked oatmeal chocolate chip cookies for my family. I am not really a fan of oatmeal cookies but since I haven't tried it yet I decided to try it and honestly I am pleased with the outcome(though the appearance looked like hamburger patties... lol!). The result was crispy tasting cookies that I really wanted. By the way, my total yield for this recipe is 27 cookies.

I found many recipes for this so what I did was combine all the ingredients that I found from different sites to come up with something that I want to use to try for myself and this is what I came up with...

OATMEAL CHOCOLATE CHIP COOKIES

INGREDIENTS:
1 cup all purpose flour
1/2 cup packed brown sugar (I don't want it to be too sweet)
3/4 cup butter(salted)
2 1/3 cups rolled oats ( I used 200g pack of quaker oats)
1/2 tsp ground cinnamon
1/2 tsp baking soda
1 tsp vanilla extract
1 egg
1 1/2 cup chocolate chips
1/2 cup chopped nuts(I used roasted almonds)

PROCEDURE:
1. Preheat oven to 350'F(175'C).
2. Mix butter and sugar until creamy then beat egg and vanilla extract in the mixture.
3. In a separate bowl, mix all dry ingredients(flour, cinnamon and baking soda).
4. Add dry ingredients into the butter mixture and mix.
5. Add rolled oats, choco chips and chopped almonds and mix until combined.
6. Put rolled oats mixture into the baking sheet and flatten each with fingers. Bake for 15-18 minutes if you want it crispy then remove from oven and let it cool from wire rack completely.

I saw one of this in Tangs Plaza Singapore when we went there about 2 weeks ago and I was dying to have one! I was definitely out on budget at that time but I promised myself to buy one if I’ll have an extra money, but the problem is I haven’t seen one on any of the stores here so I thought I would ask favor from one of my friends who works in Singapore when he’s in vacation here. Good thing that my sister would take her vacation here on July but they will have a stop over in Singapore in June so I decided to ask my sister instead if she could buy me one when she arrived there. I would definitely use this for writing a Happy Birthday message for my daughter’s birthday cake.

My daughter’s birthday would be this July, so I am already thinking what cake should I bake for her. I want to bake vanilla butter cake or mocha chiffon cake coz I haven’t tried that yet, I am already trying to find an easy but delicious recipe for that. Anyways, I am also not yet a pro when it comes to cake decorating so I am also watching videos on youtube for tips and tricks to decorate a cake. I hope I could bake a sample cake before her birthday comes because I don’t wanna ruin her birthday cake by baking it the first time. With regards to the cupcakes, I definitely go for vanilla cupcakes but I am still deciding if I would have a buttercream icing or fondant as topper. But I haven’t tried fondant yet so I really need a lot of practice since it’s only 2 months to go till her 4th birthday! Whew… what a pressure!
