Pillsbury Funfetti Cookies & Cupcakes

Time to bake again! Since yesterday was Ness's birthday I promised her that I'm gonna bake her cupcakes today. I didn't do anything from scratch since I wanna test the cake mix that my aunt sent for us. This cake mix is from Pillsbury, a Funfetti cake mix that is great for birthdays!

I decided to halve the cake mix to get cupcakes and cookies because there's also a cookie recipe on the box. In the end I was able to yield 13 cupcakes and 14 cookies all in all.

I also did some frosting for both cookies and cupcakes(though it's perfectly alright if you do not want any frosting because it was already colorful from the outside as well as the inside and also sweet enough) so what I did was I researched funfetti frosting on the internet and I was able to find one. And for the first time I did not piped the frosting and instead I just spread it on the cookies and cupcakes. We loved it, taste was good especially for the kids. I want to do another one again but next time I'm gonna bake it from scratch coz I fould some very easy recipes for funfetti cupcakes or cake.

Butter Cookies

Baked butter cookies yesterday so that Hannah could take some of it to her school as a "baon". Well what can I say? The kids loved it! It has the right amount of sweetness and crunchiness that doesn't have the "umay" factor. It's like once you started eating you just couldn't stop :)

Today is Hannah's first day of school and I already packed her lunch bag with the cookies. I hope she gets to eat it coz I baked it for her.

By the way, I used Wilton 1M to pipe these cookies and I baked it using my Silpat Non-Stick Baking liner :)


Butter Cookies Recipe

Ingredients:
1/2 cup butter, soften
1/2 cup granulated white sugar
1/2 piece egg
1 tbsp fresh milk
1 1/4 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp fine salt
1 tsp vanilla extract

Procedure:
1. Pre-heat oven at 350 degree F.
2. Cream the butter and sugar until light and fluffy. Add egg and the milk until well blended. At low speed pour the rest of the ingredients.
3. With an open star tip, fill the pastry bag with the mixture. Arrange the cookies in a grease baking sheet, 2in. apart and 2in. in length.
4. Bake for 10-15mins or until outer edges of the cookies turn light brown.
5. Remove the cookies from the cookie sheet and allow to cool in a wire rack to cool completely.

Chocolate Chip Cookies Part III

This is the 3rd time that I did chocolate chip cookies using a different recipe. The first one was from panlasangpinoy which came out flat and too sweet, the 2nd was from Baking Bites and also came out too sweet and salty but I love the texture because it was not that soft.

This one's by far the best chocolate chip cookie that I did. It has the right amount of sweetness(though I reduced the brown sugar) and also not that salty. I just wished I did the full recipe because I just used half of the recipe and I only yielded 20 cookies :(

My only complain was that the batter was little runny when I mixed all the ingredients, so when I scooped it and put it in my Silpat non-stick baking liner(this is the first time I used this) and baked it, it came out flat like the first time I did choco chip cookies. So what I did on the next batch, I put the batter on the ref to let it chill. The result was much thicker than the first batch. My family even said this is the best chocolate chip cookies I baked.

Let's see what can they say when I do my next project and that is David Lebovitz's Chocolate Chip Cookies which requires refrigerating the cookie dough for 24hrs! Yap that's correct, 24hrs. Now that's a little bit challenging but I'm ready for it. I love experimenting on making chocolate chip cookies so let's see the difference and what sets it apart from the other choco chip cookies I made.

Ghirardelli Triple Chocolate Brownie Mix

I am now taking a break from baking from scratch because I want to try the pre-mix boxes that my aunt sent for us. I became so excited when I saw this brownie mix from Ghirardelli because I know that Ghirardelli produces high quality chocolates and I couldn't wait to try it!

This box is a large one, containing 6 pouches of brownie mix. It has so much chocolate int it, imagine 3 different kinds of chocolates, semi-sweet, milk and bittersweet..who would refuse that?? I baked it on an 8x8 non-stick baking pan for 45 minutes. The smell was so good and it tasted amazingly! I couldn't wait to make another one... just loved it!
