Christmas with my Family

Hi! So how did you spend your noche buena and Christmas? Of course who wouldn't spend it with their family right? Just like you Dec.24 was spent cooking and baking for our boche buena feast. For dessert, I decided to bake Banana Bread with Walnuts and Chocolate Cupcakes with Christmas Toppers(I bought a christmas tree and christmas socks edible toppers at Divi). While I bake, Nora was in charge of cooking spaghetti, lumpiang shanghai, pata tim and biko. We also had buko salad for added dessert.

Come Chirstmas day, we watched a movie at ATC together with the kids. There's no Vice ganda movie there and Bimby and Rizza's movie was also jampacked, the next available screening was 9PM so we just watched Pagpag and the movie was actually good! There were a few scares and the people were actually screaming on most of the scary parts. We got home at around 7:30PM and the kids were happy they get to go out on christmas day :)

Easy Oatmeal Cookies

Love this cookies! So easy to make, though I had a hard time baking this because I used my gas range for the first time. The first batch that I did, it didn't fully baked coz I didn't noticed the fire went off after I closed the oven door. So lessons learned, be very careful shutting the oven door :)

Anyway this recipe only has 6 main ingredients but there are optional ingredients that you can add. I added vanilla and cinnamon so it would be tastier and it really did! It was so chewy coz of the rolled oats and I wished I had more raisins coz I only had about half cup instead of 1 cup :( I had some for work and I also gave a couple of cookies to my daugter for her school snack. This really is yummy, so better try it now!

Meet My Newest Baby!

Yey! At last I was able to buy a bigger oven that is a gas range from La Germania! The model that I bought is FS531 30WR. This is the first time that I'm gonna use a gas oven so this would surely be a hit and miss for a couple of baking tries as I'm still gonna figure out the right temp and time in using this.

Well, I already used this the first time and I was able to bake oatmeal cookies. Had a hard time setting up the right temp, first time I tried putting the knob to 170'C but didn't get to 350'F so I put it on 182'C and spot on it went to 350. Then according to the recipe it would be done in 9 minutes but mine baked at 17 minutes! Preheating also took longer than my electric mini oven. If on the electric oven preheating was done in 8 minutes, this took 12 minutes. Anyway, I still look forward on baking using this and the next time I'm gonna try baking cupcakes and brownies. So why don't you meet my newest baby, my La Germania gas range!...

Cheesy Garlic Bread

At last I was able to bake Cheesy Garlic Bread! I really wanted to do this for the longest time but a French baguette was really hard to find on supermarkets. I was able to find one at SM bakery but I didn’t like the bread so I opted to buy the one at French Baker. For one baguette the price is P63.00, expensive for me but I think it was worth it.

Cheese is an option but since I’m a cheese person, I put a generous amount of mozzarella cheese on top of the baguette. Try this, it was really delicious!

Cheesy Garlic Bread
1 baguette
1 stick of butter, softened
4-6 cloves of minced garlic (more if you want more garlicky taste)
1 tbs fresh parsley
Grated mozzarella cheese

1. Preheat oven at 375’F. In a small bowl, combine butter, garlic and parsley.
2. Cut bread in half, and brush the combined butter, garlic and parsley on both sides of the bread.
3. Put generous amount of cheese on top.
4. Bake for 12-15 minutes.
5. Cut the bread anyway you want. Best serve if hot.

Butterscotch Bars with Roasted Almonds

My cousin has been convincing me to bake butterscotch bars for the longest time and since it was her birthday(and my mom's too) last week(Nov.13), she asked me to bake it as a birthday gift to her.

This butterscoth bars is different from the first time that I made this. I used this recipe: Butterscotch Bars and though they liked it, I felt that it came out too dry. I think it was because of the eggs that I used. I only used 2 small eggs which made the batter too thick. Anyway, in replacement of the butterscotch morsels in the recipe, I used 1/2 cup of chopped roasted almonds instead.

Banana Cake with Butter & Sour Milk

I missed making this, so for a change I tried using a different recipe, the one with butter and sour milk as one of the ingredients.

When my aunt from the States went home for a vacation, she told me that her recipe for a delicious banana bread or cake includes sour milk as one of the ingredients. I still haven't used that on my banana cake so I tried to find a recipe that has sour milk on one of the ingredients.The I found this- Banana Cake and thank goodness I found this recipe! The cake turned out to be so light and soft and delicious.

I made 2 loaf breads and 1 loaf, I gave it to my friend who texted me that he really loved it! It's so delicious daw :) Next time, I'll try using cake flour, I ran out of cake flour that's why I used all purpose flour. It was done in 45 minutes, crispy on the outside and light and moist on the inside... yummy!

Vanilla Milk Cake

Hi! Long time no post here :) Got so busy with a lot of things that I took baking for granted for over a month! Wow it was that long, I really missed baking so for just one day I baked twice to make up for those times that I got lazy baking.

Last month, I bought a heart shaped non-stick pan and I really wanted to use it(I cannot wait for Valentines Day to use it). So I thought this would be perfect for making Vanilla Milk Cake that I found on the net, it looked so easy and has minimal ingredients so I baked again last Friday and I'm glad I did this.

This is so delicious! I wish I doubled the recipe coz it was gone so quickly! Fortunately, I baked banana bread after that coz it would be so "bitin" for meryenda if I just did this :) By the way, my cake was done in 50 minutes! No need for frosting, coz the cake in itself is just enough :)

Puto Bars with Cheese

Hands down, this is the best puto that I made! You see, I love making puto and when I make one, I make it a point to try different recipes available on the net. But I used this recipe again coz I loved the outcome but I don't know what I did this time coz the puto became much softer and fluffier than the previous one. We all loved this that my family requested for me to make it one more time, ASAP!

Anyway the only ingredient that I replaced was the evaporated milk coz I used fresh milk. Besides that, I followed all the ingredients indicated on the recipe, and also I used 9x9 square aluminum pan for this :)

The cheese on top was supposed to be grated, but I had a hard time grating it coz it was so soft that I just decided to puts chunks of cheese on top. I don't mind though coz I love cheese!

Basic Butter Cake

Made this easy butter cake early this afternoon and since it's my first time to bake a butter cake, I tried to find a tried and tested but easy recipe that I could make.

Casa Veneracion site is one of those food sites that I frequently visit because her recipes are easy to follow and she's very straight forward on answering queries about her methods and recipes. If you want to also try this recipe you can visit her site here: Butter Cake.

Anyway, eventhough this is a butter cake I did not use a real butter for this :( I only have a Baker's Best Margarine(the package says "The margarine that's ideal for baking!") available and I wanted try to if this would work for baking. Well, say what? I was so surprised that this tasted so good! I love it so much and my family loved it too! I think this would taste better if I used a real butter but this doesn't taste bad either. Before I was so afraid of using margarine what more on using it on a butter cake! Butter cake requires butter, duh? But I want an adventure and I want to take chances so I used a margarine and I did not fail coz I'm not kidding it really was so good :) By the way, I just omitted the salt for this recipe and to substitute buttermilk, I added about 1 tsp of vinegar to 1/3 cup of milk and let it stand for 10 minutes.

I'm not saying that it's ok not to use real butter for this one, but if you really want to have butter cake but don't have butter or unable to buy one, you can substitute this with margarine if you want. This is the first time I used margarine, I always use butter when one requires it but I think I will now buy margarine for emergency purposes only :)

Buko Pandan Salad

This is one of my family's favorite desserts ever! Whenever there's birthdays or special occassions this is one of the most requested in our home. Besides that it's so easy to make, it only has minimal ingredients and it is really delicious. If you're not a cheese person(I love cheese by the way!), you can substitute it with corn kernels or sago but the gulaman and the shredded coconut meat is really enough to enjoy this wonderful dessert. Anyway, below is our family's recipe for Buko Pandan Salad, hope you get to try it too!

Buko Pandan Salad

10 pcs shredded Buko (young coconut, drain well)
3 24grams of Mr. Gulaman Jelly Powder Mix(Buko Pandan Flavor)
2 big cans of Alaska Condensed Milk
2 packs of Nestle Cream
1 bar of Eden Cheese, cubed

1. Prepare the gulaman according to package instructions. Let it cool then slice with a knife according to desired size.
2. In a big bowl, combine the condensed milk and cream, add the shredded coconut meat and finally mix the gulaman.
3. Finally add the cubed cheese(optional) and chill it on the ref. We placed it on our freezer for awhile and it's so delicious to eat when it's so cold!

The Most Delicious Chocolate Cake!

Hands down, this is the best chocolate cake I ever baked! I promised myself that I will have a chocolate cake for my birthday so I was trying to find(for a month) a recipe I could use for my birthday. Then I found THIS RECIPE and at first I was intimidated coz it has 3 layers and I've never done a 3 layer cake before. But what the heck? It's my birthday and I'm gonna have a 3 layer cake just for myself!(well not entirely true coz I shared it with my family, haha).

I was surprised that it's very easy to make. I had all the ingredients, though I had only about 10 ounces of semi-sweet chocolate and I don't have an unsweetened cocoa. I just used the dutch processed cocoa that I have. Also, I omitted the salt coz all I have is a salted butter(it's so hard to find unsalted butter at SM!). Anyway, I still loved the taste, not too sweet and the chocolate cake itself was so moist! I didn't had an even layer on my cake coz I got lazy using my cake leveler :) Still no worries, coz all they rave was how delicious my cake was! My aunts even told me that I can sell this chocolate now and people will buy it, aaw so sweet!

The next time I'll do this, I will put some decorations on top, I was so tired from baking that I didn't put much effort on making it presentable, haha!

My Birthday!

Last Sept.8(Sunday) I celebrated my 41st Birthday with my family(my mother, daughter, aunts, uncle, cousins, my sister and her family). I just had some food cooked by our ever dependable housekeeper and I baked my own birthday cake, a very delectable and so delicious chocolate cake(I have a separate post for this). We all had a good time! We had some singing, my aunt brought her DVD player with some karaoke music. So basically a celebration as simple as this is just enough for me, as long as I'm with my family and of course my daughter :)

Moist Banana Cake (or Banana Bread)

This is always a staple in our home, as in ALWAYS. Whenever we have leftover bananas, I make it a point to bake banana bread coz it's not only very easy to make, it's also very delicious! Outcome is also very moist, not dry at all. For a change, I decided to put my banana bread on an 8x8 non-stick round cake pan. I was surprised that it baked so quickly. It was already done in 35 minutes! That's how quick it is :)

Fruity Graham Cake

My daughter, has been telling me since last week that she wanted me to "bake" a graham cake coz she loves it daw and it's so delicious that she really wanted me to make this last weekend.

So who am I not to please my little angel? So last Saturday, we bought the ingredients to the grocery and made it also that day.

I don't know why I haven't perfected this after making this over and over again. Mine always came out runny and the cream(plus the condensed milk)always doesn't set perfectly. But this time I was able to make it set(well a little) because I added a packet of unflavored gelatin. It still wasn't perfect, but at least it wasn't as runny as the previous ones I did. I read from other forums that the secret on making the "perfect" graham cake is to chill(preferably)the cream overnight but I haven't done that coz we're too excited to taste this delicious cake! Maybe next time, I'll do that. But for now, I'm quite happy with the result, not too sweet but creamy no bake graham cake for me and my daughter!

Fruity Graham Cake

1 pack Graham Crackers(Honey Flavor)

2 can Nestle Cream(tetra pack)

1 can Alaska Condensed Milk

1 can Del Monte Fruit Cocktail (big can), drained

1 sachet Ferna Clear and Unflavored Gelatin

1/2 cup hot water


1. Dissolve gelatin into 1/2 cup of hot water. continue to stir till small crystals were dissolved. Set aside.

2. Combine Nestle Cream and Alaska Condensed milk. Mix the gelatin(must not be hot)into the cream-milk mixture.

3. Prepare your container and place the first layer of graham crackers. Put some of the fruits and add the cream-milk-gelatin mixture on top of the graham crackers and fruits.

4. Repeat procedure till container is full. top with remaining fruits.

5. Refrigerate(preferably overnight). But if you can't wait till the next day, refrigerate it for 1-2 hours.

As you can see, some of my graham crackers floated when I put the cream mixture, I think the mixture must be chilled on the ref for awhile before putting it on top of the crackers so it won't be too runny.

Albers Corn Bread

The weather was gloomy for a couple of days already and I was bummed already staying inside the house coz we really can't go out due to flood and heavy rain. I was thinking of what to bake but I ran out of butter supply so I couldn't do something with butter. Then I remembered that I have this recipe which I got from the box of my Albers Corn Meal. So I decided to make Corn Bread for a change.

This is so easy to make. If I only have a corn kernel I will definitely add this but since I don't have any, I just sticked with the recipe. The outcome was a little bland for my taste but I thought of adding margarine(coz we don't have butter)and sugar with the corn bread and it tasted wonderful! By the way, I only halved the recipe coz I only had 1/2 cup of milk on our fridge :(

Albers Corn Bread(makes 12 servings)


1 cup ALBERS Yellow Corn Meal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tbsp baking powder

1 tsp salt

1 cup milk

1/3 cup vegetable oil

1 large egg, lightly beaten


PREHEAT oven to 400'F. Grease 8-inch square baking pan.

COMBINE corn meal, flour, sugar, baking powder and salt in a medium bowl. Combine milk, oil and egg in a small bowl, mix well. Add milk mixture to flour mixture, stir just until blended. Pur into prepared pan.

BAKE for 20 to 25 minutes(mine was done in 20 mins)or until wooden pick inserted in center comes out clean. Serve warm.

Chocolate Chip-Coffee Muffins

Made Chocolate Chip Coffee Muffins yesterday for our afternoon snack and though I only made 1 dozen, I still have some leftover for Hannah’s snack at school for today and some for my friends. The first time I did this, I intentionally reduced the amount of coffee granules for fear that the outcome would taste too bitter. But this time I stayed true to the recipe except using white chocolate chips instead of the brown one.

I love this! Even if you’re not a coffee lover I assure you will definitely like this muffin! It’s not too sweet, the coffee’s not overpowering just so you know and so easy to make! White Chocolate Chip Cookies

Made cookies last Sunday after a long long time! I forgot that I bought white chocolate chips when I went at Chocolate Lover last June so I made use of it on the cookies instead of the brown one. I also added some cashew nuts for added crunch and I wished I added more coz I couldn't taste the cashew nuts on the cookies after baking.

I got the recipe here: Really Good Chocolate Chip Cookies. This is my go to recipe for almost 2 years now and it still never fails me! I just replaced the choco chips with the white ones and added cashew nuts so basically it's still the same recipe. This is so delicious! You should try this :)

Ultra Moist Cheese Cupcakes

I was thinking of something to bake that I plan to give to my daughter for her morning snack at school and I thought, how about cheese cupcakes? You see I was always having a hard time what to give her everyday for her baon coz she's really mapili when it comes to food. I hoped that she will like the cheese cupcakes that I will bake coz I always am heartbroken coz she doesn't like all my baked goodies :(

Thank goodness that she liked it! Maybe because I put minions on top of the icing? Hmm, anyway this cupcakes were so good! It was not a heavy cupcake, so light and moist. I had modifications done, like I just put 168ml of condensed milk(small can) as opposed to 175ml and I used 1 cup of sharp cheddar cheese and no velveeta coz I don't have that.
