Oreo Mini-Cheesecakes

I've been wanting to make this for the longest time but since it's very seldom that I use cream cheese(besides that it's so expensive) I thought I could just make this if I have a left over cream cheese. So after making the cream cheese pound cake that only requires half of the 80z cream cheese, I still have the half so I remembered this recipe and I thought it's the perfect time!

There's no available Oreo cookies on one of the sari-sari stores inside our subd. so instead I just bought Cream-O sandwich cookies in replacement of the Oreos. Also, I replaced the chopped pecans with chopped cashew nuts and I also don't have the caramel sauce. But don't you worry, this will still taste equally delicious! By the way, when it came out from the oven, it was somewhat soft so you have to chill it for an hour or preferably overnight and it will set. I only yielded 5 mini-cheesecakes, I know it's so bitin! So just for now, there will be no sharing... :)

Cold Oven Cream Cheese Pound Cake

This is the first time that I baked something without pre-heating the oven and I must admit that I really got curious as to what would be the outcome of the cake. Well not only that it came out so soft, light and fluffy, it has a nice crisp on top and it really was delicious! You could easily smell the lemon on the cake and with grated ginger on one of the ingredients, I was afraid that it would taste well ginger-y, but you would never know that ginger was added...I mean really!

I put my batter on my 2 mini loaf pans and baked it for 45 minutes. I also put lemon glaze on top of my cake though mine came out too runny. I would definitely make this again!

Vanilla Cupcakes with Buttercream Frosting

Yesterday, I baked vanilla cupcakes for my nephew' birthday celebration at school for today. I was really excited to bake vanilla cupcakes again. I still remembered the first time I made it almost a year ago :) Now I can proudly say I perfected my vanilla cupcakes at last!

This one's so fluffy and so delicious as usual. I wouldn's say I will never try another recipe but this is my go to recipe when making vanilla cupcakes and I don't wanna change that(for the meantime). Hope everybody at my nephew's school will like it!

Homemade Hot Cocoa

Had a delicious homemade hot cocoa for breakfast! Got this recipe from the internet(forgot where I got it though). This is very chocolatey and sweet, next time though I will reduce the amount of cinnamon from 1tsp to 1/2tsp coz I don't like too much taste of cinnamon on my hot cocoa. Try it especially on a cold weather, this would definitely keep you warm :)

HOMEMADE HOT COCOA

Ingredients:
2tbs unsweetened cocoa powder
2tbs white granulated sugar
dash of salt
1tsp cinnamon
1tsp vanilla extract
1cup fresh milk

Procedure:
   Mix all ingredients until smooth using wire whisk. Heat on stove top until boiling. Pour in a mug. (Makes 1 cup).

Jamie Oliver's Easy Chocolate Cake

For New Year's eve media noche, I thought of something round that I'd like to bake to share with my family. I'd like to do chocolate cake that doesn't require frosting but I only had this recipe that I saw from foodiebaker.com that was Jamie Oliver's Easy Chocolate Cake recipe and it has to bake on an 8x4-inch loaf tin, which I don't have. But I really liked to try this recipe so what I did was go ahead and bake it but instead of the loaf tin I put it on a 10-inch round pan and prayed that it would still turn out well.

Well, well... not only that it turned out well(not burnt or under-baked at all) but it really tasted so delicious! I tweaked a little from this recipe like I used all the butter instead of 200grams, I didn't used caster or brown sugar, I just used granulated sugar and baked it for 50 minutes at 165'C on my mini-oven. It still turned out really well! By the way, I also added chopped bittersweet chocolate after putting sifted powdered sugar on top of the cake :)
