Capuccino Bars

Don't know what to bake last weekend, so I just randomly picked a very easy recipe from my recipe notebook and found Capuccino Bars recipe.

This is so easy to make but as usual(like always!) I forgot yet again an ingredient from the recipe. You see chocolate chips must be stirred in with the final mixture but since I did not do mes en place I forgot to include the chocolate chips! I am very sure that this would taste better with the choco chips but because of my laziness I must satisfy myself with very plain capuccino bars.

But mind you, this still tastes good with a hint of coffee and I think I chewed about 4 bars in all :)

Here's the recipe:
Ingredients:
1 cup + 6 tbsp    sifted all-purpose flour
1 & 1/4 tsp         baking powder
1/4 tsp                salt
6 tbsp                 butter, melted(I subsituted this with vegetable oil coz i don't have butter)
1 cup                  packed brown sugar(not packed at all coz I don't want it to be too sweet)
1 tbsp                 light corn syrup(I have a bottle that says corn syrup, don't know the diff. between light and plain corn syrup)
1 tbsp                 coffee powder dissolved in 1 tbsp water
6 tbsp                 beaten eggs
1/2 cup               chocolate chips(dang I forgot this! So prepare your ingredients first and don't you ever forget this!)

Procedure:
1. Preheat oven to 350 degree F. Line 9x5 in. pan with aluminum foil.
2. Combine dry ingredients. Sift and set aside.
3. In another bowl, using wire whisk, combine the melted butter, brown sugar, corn syrup and dissolved coffee.
4. Add the eggs and beat till blended. Pour in the flour mixture just until flour combined.
5. Stir in chocolate chips. Pour in the prepared pan and bake for 30-35 minutes.

 
 

Quick Brownies

Last night, my cousin asked a favor from me to bake her some cookies to be brought to her school for today but since I just got from work I told her I can't do so because I was very tired. She then asked me if I could bake brownies instead and it won't be from scratch, just the left over remaining pouch of ready mix that her mom bought for us, that is the Ghirardelli Triple Chocolate Brownie Mix.

I suddenly remembered that we still have 3 more pouches of the ready mix brownies. So I told her it's ok because that's very easy to make, you just add 1/3 cup of water, 1/3 cup of vegetable oil and 1 egg to the mix and put it on an 8x8 square pan and that's it, just wait for 45 minutes and it's already baked!

This is so delicious but too sweet for my taste. If you don't wanna do brownies from scratch and love moist and chewy brownies then this one's for you!

Mango Swiss Roll

I bought 1 kilo of sweet mangoes in the market yesterday so I thought about making something with mangoes as one of the ingredients. I remembered I had this recipe for Mango Swiss Roll so eventhough I am not so keen on making swiss roll again, I thought this would be the best time to practice making sponge cakes.

I planned on baking 2 swiss rolls coz the last time I baked, I just made about 5 slices on 1 roll. With a family as big as us, 1 roll just wasn't enough. Since I just have a mini oven, I planned to bake 2 batches and the first one that I baked was so thin. I always have a hard time removing the cake from the pan so after a couple of minutes I finally removed it but just like I've said it was so thin. Nevertheless, I put the filling but I had the mistake of mixing the mangoes to the filling so it became runny because of the mango juices. The correct procedure would be, just spread the mangoes after making the filling.

The second roll that I baked was a disaster! I had an inkling that it won't turn out the way I wanted it to be when I put the batter in the pan because it became too runny(maybe I over-fold it or something). I know it's not good but I went ahead and baked it. I didn't post the picture of it coz it went straight to the trash can... :(

So the first roll was really delicious eventhough the filling became runny. It was just sweet and the mangoes added more flavor to the filling. I have yet to find the perfect sponge cake recipe to bake. But I remembered making Inipit before and it was somewhat successful. I just don't know if it's the same as making sponge cakes. Will have to look for the recipe again.

Dana's 4th Birthday

Today is my niece's birthday and my sister wanted me to bake chocolate cupcakes for her birthday. I bought individual cupcake holders so that the kids could take out the cupcakes in case they can't finished it off at school.

I got the recipe this time from tease-spoon of sugar site and I must admit that I got worried when I mixed the batter coz it got a little too runny. I was supposed to add 1 cup of warm water with 1 1/2 tsp of instant coffee granules but since it was already getting runny I just added about 1/4 cup of the water with the coffee granules. I thought this would not turn out well but about 10 minutes into baking I looked inside my oven and the cupcakes already has a nice top and the smell was so good!

Wow the cupcakes turned out super moist! I really loved this cupcakes! For the frosting, I just used my tried and tested buttercream frosting and just applied green and pink gel food colorings. Super cute cupcakes I must say :) (By the way, I also baked 1 dozen of boxed funfetti cupcakes from Betty Crocker in case there wont be enough chocolate cupcakes).

Pineapple Upside Down Cake

Just made Pineapple Upside Down Cake this morning and it was already gone this evening :) I really love this cake because the sponge cake was so soft and it complimented really well with the pineapple slices and the cherries.

This recipe was adapted from Panlasang Pinoy site and I just had some modifications done on the recipe which was itemized below:

- used 3 tbs of butter(melted) instead of 4 tbs
- used 4 tbs of brown sugar instead of 6 tbs

- used butter instead of shortening
- added 2 tbs of pineapple juice to the batter

Now I had a major boo boo moment when I forgot to add 1 major ingredient on the batter! You see I already put the batter on the baking pan when I saw that there's still milk on the measuring cup that I put it into. Oh that's why my batter was so thick! I immediately panicked but got my senses back and told myself I have to redo it again. So after removing the pineapple slices and the cherries(I can still use it),I put the batter without the milk on the trash can and immediately make another one and start all over again :( Thank goodness I still got plenty of butter...

So this is the result of my pineapple upside down cake. Still successful I might say despite some problems encountered :)
