Honey Baked Bananas

For our merienda today, I made this easy no sweat baked bananas. Used 6 pcs bananas cut lengthwise and I did not used aluminum foil coz I don't have any, instead I used my non-stick baking pan. By the way if you're on a diet, just remove the brown sugar and just use honey and cinnamon :)

Fluffy Homemade Pancakes

Eversince I made this version of pancakes, this is the only one they've been looking for breakfast. I can't blame them, of all the homemade pancakes recipes I made this has almost the same taste as the ones straight from the box. Maybe because of the buttermilk? Well in my case since here in the Philippines there's no such thing as buttermilk that I know of, I just substituted it with fresh milk+vinegar. This is the first time I used buttermilk in the recipe so I guess it's because of that? Anyway, I yielded 11 pancakes measured in a 1/4 measuring cup.

Mocha Cupcakes

Yey, at last I was able to bake this cupcakes I've been dying to make for the longest time! I yielded 15 cupcakes and I used a different frosting where I just combined butter, powdered sugar, coffee granules(Nescafe Classic) and milk. Sorry I can't remember the exact measurements coz I just added a little bit of this and that till I achieved the taste and consistency that I want. This is a must try if you're a mocha or coffee lover like me :)

Chocolate Chip Cookies(AllRecipes)

This is the nth time that I've done choco chip cookies and if I were to decide I won't be making this anytime soon, but the kids were really persistent to the point that everyday they were really pushing me to make choco chip cookies.

So this time, I want to try a different recipe and found this recipe at allrecipes.com. So easy to make and has so many positive reviews so there's no harm in trying... wow! I really love the outcome! So buttery and so soft, the only thing I would've change is the baking time. I wish I baked it a little longer, maybe 2-3 minutes more coz I want a crispier cookie. My Daughter's 6th Birthday

I decided to spend my daughter's 6th birthday with her classmates at school and she was very happy that she gets to spend it with her classmates and friends. It's just a simple one unlike last year where she had a party.

I just bought the cake, a caramel cake there's no decoration on top so I just put M & M's and assorted sprinkles so the cake would not look dull. I baked chocolate cupcakes and put it on individual boxes for them to take it home. I bought the edible toppers(Sophia The First) at Divisoria and I also gave her classmates lootbags with toys and candies inside.

Classic Polvoron

I have so many posts to catch up  here coz I haven't updated my blog for sometime now. But it's just a few since I also become busy with work and family. Anyway, I'll start my post with sharing with you the Polvoron that I made twice, last July and just last month. I didn't know that it was so easy to make and I'm hoping next time I'll put pinipig coz it's one of my favorites. Below is the recipe, I already forgot where I got it but I hope you'll give it a try, I'm sure the kids would love this!
 
CLASSIC POLVORON

1 2/3 cups all-purpose flour, sifted
2/3 cup full cream powdered milk
1/2 cup refined sugar
1/2 cup butter
1/8 cup margarine
1 tsp. vanilla essence
Wax paper, for wrapping

Cooking Procedure:
Sift all-purpose flour and toast in frying pan over medium heat, stirring continuously with wooden spoon until light brown in color. Toast it for approximately 10 -15 minutes and fire off. Transfer toasted flour into sugar and milk powder mixture and mix well to blend thoroughly. Melt the butter and the margarine in a saucepan over medium heat. Add melted mixture into the dry ingredients and mix well for about 3 minutes. Then add vanilla essence and mix for 2 minutes more.

Transfer polvoron mixture into a plate or pan with a flat surface. Form mixture with your desired polvoron shapes by packing the mixture into the molder. Cool for at least 30 minutes or until firm then wrap polvoron with your desired wax paper.
 

M & M Cookies

Last Sunday, the kids made this M & M cookies and they had a really good time! Yes you heard it right, the kids(Hannah, Dana and Adriel) measured the ingredients, mixed and put the M & M's on top of the cookie dough, well of course with some assistance from me :) The kitchen ended up really messy but at least they enjoyed it so much and now they're always looking forward for our baking time together. There's still many leftovers, so yesterday they had brought some of the cookies at their school :)

Oreo Cheesecake Cookies

Love...love...love this! We have some Oreo cookies and cream cheese so it was the perfect time to bake this cookies and the kids wanted me to bake coz I haven't done so in a long time. I initially wanted to just bake choco chip cookies but then someone posted a very delicious looking Oreo Cheesecake cookies at Bake Happy Manila FB page, so I said I wanna try that too :)

Yema Cake

I've been hearing about this Rodillas Yema Cake for sometime now and I must admit that I really got curious as to how it really taste. Unfortunately, I don't know where to buy here in Cavite so when someone shared a recipe at Bake Happy Manila FB group, I said I wanna try it and see if it really tastes good. And you know what? It really was! Though my syrup became a little runny, the overall taste was really delicious. It was sweet and the sponge cake was really soft. I wanna try this again and I'll try to find a different recipe next time :)

I am having a hard time finding the recipe at Bake Happy Manila FB page, so I'll try to ask for the recipe again then I'll just post it here :)

Red Velvet Crinkles

Tried this Red Velvet Crinkles for the kids and though we all loved it, I was a little disappointed with what the color turned out. you see I would have loved it more if it became very red but it really didn't showed the color red and I don't know why it became like that. apparently, I used a different type of food coloring and that is the powdered one. The recipe calls for red liquid food coloring, since I don't have that I used my Ferna powdered strawberry food coloring :(

Chocolate Chip Muffins

Try this delicious choco chip muffins! It's so easy to make just like the double chocolate chip muffins that I previously baked. I'll just update this blog to include the recipe coz I just wrote it on a piece of paper and I still have to find it, haha!

Cake Pops

Well this is the first time I did this and for a first time I think it's just ok. I'll have to practice more coz what I found out was that it looks so easy but IT IS NOT! I had a problem with my coating coz it became too thin and runny. I don't know how I'll make it more thick. I think I'll change my chocolate coating the next time.

Anyway, I did not made my own cake and frosting. I just bought a mocha cake from Goldilocks. For a half roll I was able to make 17 cake pops in all.

The kids loved it! The colorful sprinkles was really cute and I really want to make it better next time.

Double Chocolate Chip Muffins

Hi guys! How are you? I've missed blogging so much but I've got busy last March with orders and with the graduation of my daughter from pre-school that I hadn't got enough time to update my blog.

Well now I've got a little time to squeeze in some updates so I'd like to share with you this delicious muffins that I baked last weekend. I forgot where I copied the recipe coz what I had was just handwritten recipe that I wrote. I think I got it from one of the books I saw from National Bookstore. I don't want to buy the whole book so I just copied the recipe :) I'll just share with you the recipe:

Double Chocolate Chip Muffins
Ingredients:
300 grams (1 cup) All Purpose Flour
200 grams (1 cup) packed Brown Sugar
35 grams (1/3 cup) Cocoa Powder
2 tsp baking powder
1/2 tsp salt
6 tbsp butter or margarine, melted
350ml milk
2 eggs
1 cup semi-chocolate chips

Procedure:
1. Pre-heat oven to 400'F or 200'C.
2. Mix all dry ingredients and add one at a time the wet ingredients to the dry ingredients.
3. Add the choco chips carefully and do not overmix it.
4. Pour into prepared muffin pan and bake for 25-30 minutes.
5. Cool into rack before serving.

Just wanna take this time to thank God for the orders coming. I am now fully loaded for this week, so tired but I'm not complaining though :)

Thick & Chewy Chocolate Chip Cookies

Made this cookies last Sunday and this were indeed very chewy, soft and thick! The kids loved this cookies and so am I. Will definitely make this again using below recipe. I'll just lessen the sugar next time as it tasted too sweet for my taste buds :)

Thick and Chewy Double Chocolate Cookies

Made cookies for the kids yesterday and though this cookies were delicious, mine didn't came out thick at all! I don't know if I overmixed the batter but I noticed that the batter weren't thick so I was expecting it would spread out in the end. And I was right! The first batch became giant cookies so on the next I tried to scoop it on a tablespoon. It came out just right.

Wedding Cupcakes Giveaway

I baked vanilla cupcakes with buttercream frosting for an officemate coz he has plans on ordering cupcakes from me for his wedding. He said if I could make the 2 cupcakes be put on an individual holders to see what it would like like as a giveaway. In short, he want some samples from me.

Adriel's 7th Birthday!

Had the pleasure of baking my nephew's 7th birthday cupcakes yesterday and I did 1 dozen vanilla cupcakes with buttercream frosting. I bought ready made edible toppings which has a design of football and basketball. What I did that is different from before was the frosting. This one's more stabilized than the buttercream frosting that I used before. Eventhough I did not put it on the ref, the swirls held its shape and did not melt. I also did Baked Mac with a different recipe this. I used a 9x13 non-stick pan and this has more cheese than the last Baked Mac that I did before.

We had a lot of good time on my nephew's birthday eventhough we didn't had a party just like the other kids that had 7th birthday. What's important is family time and that's what we had yeterday :)
 
 
 

Grilled Cheese Sandwich

For our breakfast yesterday, I did something different. We had sandwich that was rather unusual coz we always have fried rice, hotdogs and eggs or sometimes our leftover food from our dinner. Since I wanted to use my mother's griller that she bought from SM, I thought it was the perfect timing to use it so I made Grilled Cheese Sandwich for our breakfast.

This one's so easy and I will guarantee you that kids will love this! Try making this for your breakfast, a no sweat easy recipe that your family will surely love.

Grilled Cheese Sandwich

Ingredients:
1 loaf of Gardenia bread (or any bread/tasty of your choice)
slices of cheese (I bought American Cheese, or you could use quickmelt cheese)
slices of bacon
butter

Instruction:
1. Put the pan on stove in medium heat till hot.
2. Add the butter then put the slices of bread. If it was a little brown already, put your cheese and bacon and cover the other bread with another slice.
3. Heat till the cheese begins to melt.
4. Repeat the procedure till you run out of cheese..haha!

Fudgy Brownies

Made this Fudgy Brownies yesterday using my 10x13 in baking pan instead of the 9x13 pan requirement. I do not have a 9x13 but the brownies still turned out fine although of course it became a little thinner.

The only complaint that I have with this recipe is that I had little bits of flour(or baking soda) on the finished product although I sifted them before mixing. They looked liked bits of white chocolate chips on my brownies though they didn't made a significant difference with regards to taste. I will make this again and I will already use a 9x13(I just wish I have one already by the time I make this) and I will see to it that there would be no bits of flour/soda on the batter before baking it :)

Chocolate Sour Cream Bundt Cake

Happy New Year everyone! How was your New Year? As for us, we just stayed in the house on new year's eve as well as the new year itself. We didn't spent the new year outside unlike christmas. We had some relatives visiting us in our house and I pretty much did nothing on new year's day.

For media noche dessert, my original plan was to make baked mac but unfortunately I was so unlucky to find parmesan as well as mozarella cheese on any of the supermarkets that I went. I think all the people went panic cheese buying coz I really can't find any at all! So I just did graham dessert and Chocolate Sour Cream Bundt Cake. This cake was really delicious! Not too sweet at all. I just don't understand why my chocolate glaze wasn't thick enough. Anyway, still yummy eventhough I didn't achieved the glaze that I want for my cake.
