Moist Banana Mini Muffins

Have you tried the Banana Mini Muffins from French Baker? Whenever I have time to drop by at SM, I always buy these mini muffins coz it's so delicious! I always thought of baking one for myself and my family so I tried to find an easy recipe on the internet and I found Mini Chocolate Chip Banana Muffins that's so easy to follow! I just removed the chocolate chips but it's basically the same. It's very moist and soft and have a wonderful taste of the banana, not very overpowering unlike other recipes. I sold these muffins to my co-workers and they have positive feedbacks with regards to the taste :)

Milk & Cheese Cupcakes

Made these cupcakes last Nov. but it's only now that I was able to blog about it. I'm sorry that I won't be able to share with you the recipe where I got it from coz I think the site is down already( What I always do is bookmark the recipe on my tablet and that's were I always refer when I bake but when I checked these cupcakes' recipe from the site it's already gone :(

Anyway, these cupcakes are a hit to my kid, niece & nephew! To think that my daughter is not very fond of cheese, then it's something. They were able to eat a couple of these cupcakes so I'm happy. Next time, I wanna try a different recipe though I'm really sad that I was not able to save the recipe for this.

***UPDATE*** 03/27/2015
I was able to try a different recipe just last month. I used the recipe from Kawaling Pinoy(Cheese Cupcakes. It was really yummy! I just used the whole bar of Eden Cheese as opposed to quickmelt and cheddar cheese, but it still turned out really well. Try it I'm sure not only the kids will love it, but your whole family will.

Spritz Cookies

Got my Wilton Comfort Grip Cookie Press from my cousin which I bought from Amazon! My cousin vacationed at the US and she returned last week. I was so excited to use this so I baked Spritz Cookies last Sunday. And wow it was really easy to use! I just had a hard time with the dough coz it became so sticky, unlike the dough I watched at youtube that is firm. This is the same as the ones from Wilton so I might try other recipes next time. I used the 7 discs and I will use the other 5 discs next time :) Look at my cookies, aren't they cute?

Media Noche Feasts

So busy preparing for our media noche desserts last Dec.31 that after baking I just wanna lay down and sleep :) But happy anyways coz my family loved what I prepared. These were what I did last media noche- Graham Cake with Glazed Cherries and bits of Pineapple, Pineapple Upside Down Cake, Banana Cake with Walnuts and Food for the Gods. For the Graham Cake, I'll share with you my recipe below:

Graham Cake
2 packs of Graham Crackers
2 packs of 250ml of All Purpose Cream(chilled preferably overnight). Also chill your bowl.
250ml of Alaska Condensed milk
glazed cherries and pineapple tidbits for toppings (or you can try whatever you want, mangoes, fruit cocktail, peaches, etc)

1. Take out your bowl and cream from the ref and whip the cream too increase its volume.
2. Add the condensed milk and beat it together with the cream.
3. Layer your graham crackers unto the bottom of your tray. I used 8x8 pyrex baking dish.
4. Pour the whipped cream and milk mixture making sure to cover all surface.
5. Repeat the procedure till you have 3 layers.
6. Top with your preferred toppings.
7. Chill at least 2 hours.

Our Noche Buena Desserts

I baked 2 Vanilla Mini Cakes(7in. round) and 24 Mini Chocolate Cupcakes with Dulce De Leche Frosting last Dec.24 for our Noche Buena. The Dulce De Leche was from Mardel which I bought from S&R for only 300 pesos. If you don't have any time to boil condensed milk to make Dulce De Leche or is afraid of doing so(like me), Mardel's Dulce De Leche will solve your problem. I like it's taste, just right for my choco cupcakes.

Got this Vanilla Cake recipe from usual) and for the Buttercream Frosting, I just combined butter, powdered sugar and a little bit of milk. Sorry I can't give exact measurements coz I can't remember how I came up with this frosting, haha!

Food for the Gods

First off, I really don’t have any idea why this is called Food For The Gods. I was really curious as to how it tastes like. I haven’t tasted dates before. So when I had the opportunity to buy one, honestly what I first thought of baking was fruit cake but since I didn’t find any molasses last Dec. I said why not try Food for the Gods? Then after having a taste of it, I now understand why it is called so. Coz it tasted so heavenly! I really love it! Now I know why dates are not cheap. Walnuts and dates are a good combination, very flavorful and very rich in taste. It is so addicting that I made this twice in a week! Might as well, store walnuts and dates from now on J

Basti's Birthday

Last November, I was tasked to do the birthday cupcakes for Basti's 6th birthday so I made Chocnut Cupcakes and Mini Oreo Cupcakes for the celebrant and his guests. Aren't these cupcakes with Adventures Time toppers cute? Anyway, the feedback was good which made me happy :) There was one guest who was a co-worker, approached me to tell me that she want me to bake her Oreo Cupcakes for her son's birthday. Of course I just did that, making 2 mini Oreo Cupcakes last Dec. :)

White Chocolate Chip Oatmeal Cookies

I had leftover white choco chips and I was thinking what to bake using it. So I searched recipes from and found this oatmeal cooking with white choco chips. The ingredients were almost the same as with the regular choco chip oatmeal cookies so basically this is a no sweat easy peasy recipe for anyone to make. I used all my leftover white choco chips on this one so I’m planning to buy again coz I really love this cookies that I’m planning to bake these again 

Oreo Cupcakes

Love love these cupcakes! I love that when you bite on the cupcake, you could still taste a bit of the crushed oreos. I made these on my mother's birthday celebration and it was a hit to my relatives! It's so easy to make, so why don't you try it now, I'm sure not only the kids will love this but also the older ones :)

Chocnut Cupcakes

Who does not love peanut butter on their cupcakes? Well I know of some, but not me! Coz I love peanut butter and this local brand of chocolate called Chocnut. Then I found this recipe at Bake Happy Manila combining the Chocnut and peanut butter on the frosting and I thought why not give it a try.

For the choco cupcakes, I just used my tested choco cupcakes recipe which you could find on my blog. Then the frosting recipe is below:

Chocnut Cupcakes Frosting

1 stick butter, room temp.
½ cup peanut butter
¼ cup shortening
1 tbs cocoa powder
1 tsp vanilla
Around 1 ½-2 cups of powdered sugar

Just mix everything(except sugar) until smooth and creamy. Add in powdered sugar Little by little until desired consistency is achieved. Pipe on top of cooled cupcakes and garnish with Chocnut pieces. This frosting is enough to frost around 12-14 cupcakes
