Mango Salsa Salad with Lime Vinaigrette

My first time making salad- yey for me! I hope I did well and I think I did well for a first time..haha. I just combined different recipes I found on the internet hoping it would taste good. The salsa became a little sour but the vinaigrette with the lettuce was really delicious! If you're into vegetable salads why not give it a try?

Gingerbread House Decorating

I was thinking of a fun activity for the kids for the Holidays so I thought why not decorate Gingerbread House! But instead of Gingerbread, we will use Graham Crackers for less effort hehe. I found this easy to follow instruction on how to assemble the house here - How to Make Graham Cracker Gingerbread Houses. This site also has a recipe for the royal icing that will glue the house as well as glue the decorative ornaments the kids will use. I only halved the recipe and it was enough(actually there was more left) for the 3 kids plus me :)


Double Chocolate Cookies with Almonds and Choco Chip Cookies with Walnuts

Made these babies for my friends at work. I was trying to find an easy recipe for chocolate cookies with double chocolate ingredients with a deep chocolate-y flavor, since I still have semi-sweet chocolate bar and I want to use my cocoa powder. Simple Wedding Cake

I had a co-worker who got married about 2 weeks ago and another co-worker of mine who also bakes asked me if I would like to bake a wedding cake with her so that the cake will be our wedding gift to the newlyweds. I said sure why not! So one Sunday, I went to her house so we could bake the cake.

The cake was a Chocolate Cake with Cookies and Cream Frosting. We initially had a problem with the frosting coz it didn't set. She used ganache but the white choco chips + all purpose cream didn't set. I didn't know what happened but we decided to add Oreo cookies so that the cookies will add volume. We refrigerated it for awhile then thank goodness it finally set!

Lemon Bars

Easy recipe with easy to find ingredients, this lemon filled recipe will surely be a hit for all those who love lemons like me! By the way, I halved the recipe and baked it on a 8x8 square pan.


Lemon Bars

Ingredients
Makes: 36 bars
1 cup butter, softened
1/2 cup white sugar
2 cups all-purpose flour
4 eggs
1 1/2 cups white sugar
4 tablespoons all-purpose flour
2 lemons, juiced

Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
3. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1/12 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.
